Il divieto li obbligava ad operare di nascosto, col timore di una multa da duemila dollari se li scoprivano. E proprio in quel dieci per cento ci sono le aree meno antropizzate del nostro Paese, le meno stravolte da un falso concetto di modernizzazione e, di conseguenza, le più ricche di esempi autentici di agricoltura, di artigianato, di specialità alimentari tradizionali.Le aree protette, per ragioni intrinseche, hanno favorito una spinta molto forte alla creazione di nuove imprese agroalimentari: pensiamo a tutto quel che significa il nuovo agriturismo, all’impulso che ha avuto l’agricoltura biologica o alla salvaguardia di germoplasma a rischio di estinzione. Tutte attività “nuove” che vanno a sovrapporsi e ad integrare quelle tradizionali ancora esistenti. E nel nostro paese sono ancora tantissime, un giacimento che, più si scava, più riserva sorprese.Dopo un primo approccio, ci siamo resi conto dell’immensità e della novità di questa impresa. Non si trattava “soltanto” di catalogare le varie tipologie di prodotti, come, con encomiabile preveggenza, alcuni anni or sono fece l’équipe del professor Corrado Barberis, un lavoro poi trasferito nella fondamentale serie di “Atlanti” pubblicati dall’Insor. Occorreva completare le caselle dei prodotti tipici con i nomi dei produttori, con l’inventario di artigiani, allevatori, agricoltori.Non solo: con grande lungimiranza il Ministero ci chiedeva di compilare quell’inventario non come un elenco telefonico, ma attribuendo a quei produttori un giudizio prima di merito (quel prodotto è tipico? Rispetta i parametri di territorialità, tradizione, genuinità che un prodotto tipico deve esprimere?) e poi organolettico.

Nel frontespizio del primo volume dell'"Almanach des Gourmands" di Grimond de la Reynière, stampato nel 1804 a Parigi, è raffigurata una strana e singolare libreria. Si tratta della biblioteca del goloso. Qui, sui lignei e seriosi scaffali a muro rappresentati nell'incisione che, alti e profondi, giungono fino al soffitto e fanno pensare al facile anacronismo di un gigantesco e capiente frigorifero, trovano posto, accostate in luogo dei volumi rilegati in pelle e oro zecchino, provviste alimentari d'ogni tipo.

Last March at le Plateau, Mexican artist Erick Beltran developed a body of work around the notion of synesthaesia as a metaphor for the translation of practices and the creation of links between unrelated things as a way of organising the chaos of signs. He worked full-time over four months in the art space organising workshops with children or art students, participating in debates, inviting scientists to respond to his experiences… This working method, based on exhaustion and energy expenditure, lead him to performances and presentations considered as never-ending events.

Erick prepared a dinner at the Kadist foundation to accompany his discourse, considering different dishes as tasteful translations and creating the baseline for a conversation about synesthaesia between him and the 25 dinner guests.

Il senso del Food Design è quello di riunire insieme queste due pratiche artistiche arte/design esaltandone il carattere pop e ludico; il cibo (artisticamente cucinato, cioè manipolato dall’uomo) e il design (operazione di disegno ergonomico) si uniscono facendo diventare il materiale alimentare oggetto d’uso, funzionale e utilizzabile. Non il classico concetto di progettazione come supporto legato al cibo, ma un concetto più innovativo e provocatorio, attraverso il quale siano gli oggetti stessi ad essere costruiti con il cibo.
